Baked Ziti

Serves Dinner for 2 w/leftovers

Ingredients:
1 box (1 pound) ziti pasta
1/2 sweet red pepper, chopped
1/2 sweet green pepper, chopped
1 container (15 oz) ricotta
1 package (8 oz) shredded mozzarella cheese
4 oz sliced turkey pepperoni, slices quartered
1/2 teaspoon dried basil
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup grated Parmesan cheese
1 jar (26 oz) marinara sauce
1 can (28 oz) plum tomatoes, drained and broken apart.
Instructions:
1. Bring pot of salted water to boiling. Add ziti; cook 4 minutes. Drain; rinse with cool water. Transfer to bowl.
2. In medium-size bowl, mix ricotta, half the mozzarella, the pepperoni, basil, salt, pepper and 3 tablespoons parmesan. Add to ziti; stir to combine.
3. Add half the marinara sauce and half the tomatoes to ziti. Coat 13 x 9 x 2in baking dish with nonstick cooking spray. Transfer pasta mixture to prepared dish, spreading level. Top with remaining marinara sauce and tomatoes. Sprinkle with remaining mozzarella cheese and remaining Parmesan. Cover with foil; refrigerate until baking or overnight.
4. To bake: Heat oven to 375?. (If taking the dish directly from refrigerator, place in oven while heating.) Bake, covered, for 30 minutes. Uncover and bake 15 minutes. Let stand 10 minutes.
Notes:
This is a great dish to serve after church to company. You just make it on Saturday and pop it in the fridge. If you're like me, you can always find someone to feed. (Or you can just invite them during the week.) Get home a few minutes before them and pop it in the oven. What could be simpler?!?
