Oatmeal Cookies (w/ fructose)

Ingredients:
1/2 lb. (2 sticks) butter, at room temp.
2/3 cup fructose, or to taste (or 1 cup regular sugar)
1 cup all-purpose flour
2 cups Quick Oats
1 tsp baking soda
1/2 tsp salt
1/4 tsp ground nutmeg
1 tsp vanilla extract
Instructions:
Preheat oven to 350 degrees. In a large mixing bowl with electric mixer, cream butter and sugar until pale yellow. Add the flour, oats, soda, salt, nutmeg and vanilla. Mix until thoroughly blended.
Drop dough by rounded teaspoons onto greased baking sheets, placing them about 1 1/2 inches apart. Using the palm of your hand, press lightly on each ball to flatten it to a 1/4 inch thick round. Bake for 10 to 12 minutes or until edges are golden-brown. Cool 10 minutes and remove to racks.
Notes:
Do not use Criso vegetable shortening to grease cookie sheets-- it will cause a bitter flavor. Variations: Stir 1 cup raisins, chopped dates or chocolate chips into batter. Programmer's Note: These were kinda dry. Anyone know how to cure this? :)
