Ed's Enchiladas

Serves 12 Enchiladas

Ingredients:
12 corn tortillas
1/2 8 oz. can El Monterey Sauce (1 cup)
4 cups water
1 cup oil
2 cups grated cheese
1 - 1½ can xlarge olives (chopped)
Instructions:
Preheat oven to 350 Degrees.
Sauce:
Add a small amount of water and sauce to sauce pan on med heat. Continue to add sauce and water in small amounts, stirring continuously. Stop when you have a half pan of water with a half can of sauce.
Tortillas:
Heat oil in pan until a drop of water on it sizzles. Pass tortilla through oil and then stack with thin layer of sauce between. Add cheese and roll. Place into pyrex dish (greased with Pam if available) and cook at 350 degrees for 15-20 min, or until cheese is melted. Add more sauce AFTER cooking, or the enchiladas will be too papery.
Notes:
If you prefer a more spicy enchilada, you may add some Chili Powder to the sauce.
