light saucy pesto sauce

Serves about 2 C of sauce

Ingredients:
1/4 pine nuts (or more if you love pine nuts)
2 C packed fresh basil (equivelant to one large bag from the store)
2 C packed baby spinach salad leaves
4 garlic cloves (or more or less depending on how you feel about garlic. You can even leave it out.)
1 1/2 C grated parmesean cheese.
1/2 tsp. lemon juice
1/4 tsp. salt
1/4 tsp. pepper
1/2 cup extra virgin olive oil
Instructions:
1. Toast pine nuts for 8-10 min. at 350 degrees F. A toaster oven works great for this.
2. In a food processor, blend up all the ingredients until it is a smooth paste.
3. It can be frozen or eaten immediatly with about a pound of pasta and some cherry tomatoes or other veggies. Also for use in pesto pizza or any other place pesto can be found.
Notes:
I like this pesto because the spinach gives it a lot of volume. Some pestos are kind of dry and you use them sparingly, but this one is way saucy.
