PA Dutch Filling

Ingredients:
2 cups hot mashed potatoes
1 tablespoon parsley
1 egg, well beaten
2 tablespoons butter, melted
1 teaspoon salt
pinch of pepper
1 small onion, diced
1/2 cup diced celery
seasoned bread crumbs or cubes (cubes are better)
Instructions:
Mash the potatoes as you would for a normal meal (i.e. with milk). While mashing the potatoes add the parsley, egg, butter, salt and pepper and thoroughly mix together.
Stir in Onion and Celery and bread crumbs or cubes. The mixture should not be too dry, you should be able to tell that there are mashed potatoes in it.
Dot the top with a few slices of butter (optional)
Bake in oven at 325 for about an hour
Notes:
Aparently you're not supposed to stuff a "bird" with this, because of the potatos. This was adapted from an old cookbook, amounts are somewhat aproximate.
